Casein proteins have a sensitive pH and are 'compatible' with the acidic environment of the stomach. As a result, this can cause casein chains to hold even longer than whey and other proteins, until they break down into amino acid subcomponents. Given its unique delayed-action qualities, casein can be described as an anti-catabolic or protective protein.
